A nutritious and easy-to-prepare meal prep lunch packed with protein, healthy fats, and fiber-rich vegetables.

Ingredients

  • 1 pound boneless, skinless chicken breast (or tofu for a vegetarian option)
  • 2 cups cooked quinoa (or brown rice)
  • 2 cups broccoli florets
  • 1 bell pepper, diced
  • 1 medium carrot, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 teaspoons dried oregano
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the ingredients: Start by washing and chopping all the vegetables. If using chicken, cut it into bite-sized pieces for even cooking.
  2. Cook the protein: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken (or tofu) and season with salt, pepper, and oregano. Cook for about 10-12 minutes until golden brown and fully cooked. Remove from the skillet and set aside.
  3. Sauté the vegetables: In the same skillet, add the remaining tablespoon of olive oil. Sauté the broccoli, bell pepper, and carrot for 5-7 minutes until tender but still crisp.
  4. Combine ingredients: Stir in the cooked quinoa and cherry tomatoes into the skillet, mixing well with the vegetables. Heat through for about 3-4 minutes.
  5. Add the protein: Once the quinoa and vegetables are heated, return the cooked chicken (or tofu) to the skillet. Stir everything together and adjust the seasoning if needed.
  6. Garnish and serve: Remove from heat and sprinkle with chopped parsley before serving or storing in airtight containers for meal prep.

Notes

Fresh vegetables provide the best flavor. Avoid overcooking the sautéed vegetables to keep them crisp. This recipe is flexible for dietary swaps.
