Ingredients
1 cup cottage cheese
1 ½ cups shredded mozzarella cheese
½ cup almond flour
1 large egg
½ tsp garlic powder
½ tsp Italian seasoning
¼ tsp salt
¼ cup sugar-free pizza sauce
¼ cup chopped turkey pepperoni or cooked chicken sausage
Optional toppings: diced bell peppers, olives, mushrooms, onions
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine the cottage cheese, egg, almond flour, garlic powder, Italian seasoning, and salt. Stir until the mixture is well blended.
Fold in the shredded mozzarella until fully incorporated into the batter.
Using a spoon or cookie scoop, drop small mounds of the batter onto the baking sheet, leaving space between each mound.
Spoon a small amount of pizza sauce onto each bite and sprinkle with additional shredded cheese. Add your choice of optional toppings.
Bake for 15 to 18 minutes, or until the tops are golden brown and the cheese is bubbly and melted.
Allow the bites to cool slightly before serving. Enjoy warm for the best texture and flavor.
Notes
To ensure best results, avoid overmixing and keep an eye on the baking time. Feel free to experiment with toppings and cheese types.
