A delightful dish that combines savory chicken, tangy kimchi, and hearty rice, perfect for a quick weeknight meal.

Ingredients

  • 2 cups cooked rice (day-old rice works best for texture)
  • 1 cup kimchi, chopped
  • 1 cup chicken breast, cooked and shredded
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced
  • 2 eggs (optional)
  • Soy sauce to taste
  • Sesame oil (optional)
  • Salt and pepper to taste

Instructions

  1. Heat the oil: In a large skillet, heat 2 tablespoons of vegetable oil over medium heat until it shimmers.
  2. Stir-Fry the kimchi: Add the chopped kimchi to the skillet and stir-fry for 2-3 minutes until it’s heated through and slightly caramelized.
  3. Add chicken: Stir in the cooked and shredded chicken until well combined and heated through, about 1-2 minutes.
  4. Mix in rice: Add the cold cooked rice to the skillet. Pour in soy sauce and mix thoroughly, ensuring the rice is well coated.
  5. Cook the eggs (optional): If using eggs, create a well in the center of the rice, cracking the eggs into the well. Scramble them and cook until they’re set, then mix into the rice.
  6. Finish with green onions: Stir in the sliced green onions, drizzle sesame oil, and season with salt and pepper to taste.
  7. Serve: Plate the fried rice hot and enjoy!

Notes

Use day-old rice for better texture; feel free to customize with other proteins or vegetables.
