A delightful one-pot dish featuring tender chicken, creamy sauce, sun-dried tomatoes, and garlic, perfect for busy weeknights or special occasions.

Ingredients

  • 4 chicken breasts
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 1 cup sun-dried tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Grated Parmesan cheese for serving
  • Fresh parsley for garnish

Instructions

  1. Sear the chicken: In a large pot over medium heat, add a drizzle of oil. Sear the chicken breasts for about 5 minutes on each side, or until golden brown. Remove and set aside.
  2. Sauté aromatics: In the same pot, add minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  3. Create the sauce: Pour in the chicken broth and heavy cream, stirring to combine.
  4. Add the orzo and herbs: Mix in the orzo, dried basil, and oregano, ensuring the orzo is fully submerged in the liquid.
  5. Simmer the chicken: Return the seared chicken to the pot. Bring to a simmer, then cover and cook for 15-20 minutes, or until the orzo is tender and the chicken is cooked through.
  6. Season: Once cooked, season with salt and pepper to taste.
  7. Serve: Dish out the orzo and chicken, topping with grated Parmesan cheese and garnishing with fresh parsley before serving.

Notes

Chicken breasts provide a lean protein source; feel free to substitute with thighs for a juicier option. Heavy cream makes the sauce rich and creamy, but you can opt for half-and-half for a lighter version.
