Ingredients
4-5 medium Potatoes, peeled and diced
2 cups Broccoli, chopped
1 cup Heavy Cream
1.5 cups Sharp Cheddar Cheese, shredded
1 can Cream of Mushroom Soup
1 teaspoon Garlic Powder
Salt and Pepper, to taste
Olive Oil or Butter, for greasing the baking dish
Instructions
Preheat the oven to 350°F (175°C).
Prepare the broccoli by steaming it lightly until just tender, about 3-4 minutes.
Cook the diced potatoes in boiling water for 10-15 minutes until fork-tender, then drain.
Make the filling by combining cooked potatoes, chopped broccoli, heavy cream, cream of mushroom soup, shredded cheddar cheese, garlic powder, salt, and pepper in a bowl.
Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
Top with remaining cheddar cheese.
Bake for 25-30 minutes until bubbly and golden on top. Optionally, broil for the last 3-5 minutes for extra browning.
Serve after letting it cool for a few minutes.
Notes
Ensure potatoes are just tender to avoid mushiness in the casserole. Adjust seasonings to personal taste.
