Ingredients
1 medium spaghetti squash
1 pound ground meat (beef, turkey, or chicken)
1 small onion, chopped
2 cloves garlic, minced
1 cup marinara sauce
1 teaspoon Italian seasoning
Salt and pepper, to taste
Grated Parmesan cheese (optional)
Instructions
Preheat the oven to 400°F (200°C).
Prepare the spaghetti squash: Cut in half lengthwise, scoop out seeds, and place cut-side down on a baking sheet. Roast for 30 minutes.
Cook the meat: Heat a skillet over medium heat, cook chopped onion until translucent (about 5 minutes), then add minced garlic for an additional minute.
Brown the meat in the skillet, breaking it up until browned and cooked through (7-10 minutes), then drain excess fat.
Combine ingredients: Stir in marinara sauce and Italian seasoning, seasoning with salt and pepper. Simmer on low heat for 5 minutes.
Fork the squash: Remove from oven, cool slightly, and use a fork to scrape flesh into strands.
Serve: Divide spaghetti squash among plates, top with meat sauce, and sprinkle with Parmesan cheese, if desired.
Notes
For added flavor, consider sautéing bell peppers or mushrooms with the onion and garlic.
